It was hand-picked, chilled and then whole bunch pressed (straight to barrel). Wild fermentation began within 3 days of pressing. This Chardonnay has spent 10 months in French oak of which 40% is new. We use an array barrel sizes; Puncheons, Hogsheads and barriques. Each oak vessel contributing different layers and interest.
A lifted perfume of zesty lemon, stone fruit & cashew nut. A fleshy, bright chardonnay with plenty pf power and length, with hints of white peach, citrus and custard tart.
